- 4 large orange bell peppers (or any color)
- 2 cups shredded cooked chicken
- 1 cup cooked jasmine rice
- 1/2 cup shredded cheese (cheddar, mozzarella, or blend)
- 1 small onion, finely chopped
- 1 cup diced tomatoes (fresh or canned)
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon cumin
- Salt and pepper to taste
- Fresh cilantro (optional, for garnish)
Instructions
- Preheat oven to 375°F (190°C). Slice tops off bell peppers and remove seeds and membranes. Lightly salt the inside and set aside in a baking dish.
- In a skillet over medium heat, heat olive oil. Sauté onion for about 5 minutes until softened.
- Add diced tomatoes, garlic powder, paprika, cumin, salt, and pepper. Simmer for 3–4 minutes.
- Stir in shredded chicken and cooked rice. Add shredded cheese and stir until combined and cheese is melted.
- Spoon the filling into each prepared pepper, pressing down gently to pack tightly.
- Cover dish with foil and bake for 25–30 minutes until peppers are tender and filling is heated through.
- For a golden cheese top, remove foil for the last 5–7 minutes of baking.
- Let cool slightly, garnish with fresh cilantro if desired, and serve warm.
Notes
These stuffed peppers are perfect for meal prep. Prepare filling and assemble up to 3 days ahead and bake when ready. Store leftovers in the fridge for 3–5 days or freeze for up to 3 months. Use cauliflower rice for a low-carb version or add extra vegetables like spinach, corn, or zucchini to the filling.
