  • 3/4 cup light brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon professional red food coloring*
  • 2 cups all-purpose flour
  • 1/3 cup cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • For the Coating:
  • 1/2 cup granulated sugar
  • 1/2 cup powdered sugar

Instructions

  1. Preheat oven to 350°F and line a baking sheet with parchment paper. Set aside.
  2. Cream together the butter, brown sugar, and granulated sugar until light and fluffy. Scrape down the sides as needed.
  3. Add eggs one at a time, beating well after each. Stir in vanilla and red food coloring until fully combined.
  4. In a separate bowl, sift together flour, cocoa powder, baking powder, and salt. Gradually add to wet mixture and mix until just combined. Do not overmix.
  5. Place granulated sugar and powdered sugar in two shallow bowls. Scoop dough into 1-ounce portions and roll each ball in granulated sugar, then powdered sugar.
  6. Arrange dough balls on prepared baking sheet, spaced about 1 inch apart.
  7. Bake for 10 minutes, until tops are cracked and edges look set. Centers should appear slightly underbaked.
  8. Cool on baking sheet for 5 minutes before transferring to wire rack.

Notes

Use room temperature eggs and butter for even mixing and softer texture. Increase red food coloring for more vibrant hue. Don’t skip the sugar coating – it enhances the crinkle look. Bake just until tops crack and centers remain gooey.
