  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • For the glaze (optional):
  • 1 cup powdered sugar
  • 23 tablespoons fresh orange juice
  • ½ teaspoon orange zest

Instructions

  1. Preheat oven to 350°F. Line two baking sheets with parchment paper.
  2. In a large bowl, whisk together almond flour, sugar, baking powder, and salt.
  3. Add egg, marmalade, orange zest, and vanilla. Mix until a soft dough forms.
  4. Drop rounded tablespoons of dough onto prepared sheets, spacing 2 inches apart. Flatten slightly.
  5. Bake 12-14 minutes until edges are golden and centers are soft.
  6. Cool on pan 5 minutes, then transfer to wire rack.
  7. For glaze: Whisk powdered sugar, orange juice, and zest until smooth. Drizzle over cooled cookies.

Notes

Store in an airtight container for up to 5 days. Freeze baked cookies for up to 3 months. Use finely ground almond flour, not almond meal.
