- 2 cups almond flour (finely ground, not almond meal)
- ½ cup granulated sugar
- 1 large egg
- ¼ cup orange marmalade (store-bought or homemade)
- 2 tablespoons fresh orange zest (from about 2 oranges)
- 1 teaspoon vanilla extract
- ½ teaspoon baking powder
- ¼ teaspoon salt
- For the glaze (optional):
- 1 cup powdered sugar
- 2–3 tablespoons fresh orange juice
- ½ teaspoon orange zest
Instructions
- Preheat oven to 350°F. Line two baking sheets with parchment paper.
- In a large bowl, whisk together almond flour, sugar, baking powder, and salt.
- Add egg, marmalade, orange zest, and vanilla. Mix until a soft dough forms.
- Drop rounded tablespoons of dough onto prepared sheets, spacing 2 inches apart. Flatten slightly.
- Bake 12-14 minutes until edges are golden and centers are soft.
- Cool on pan 5 minutes, then transfer to wire rack.
- For glaze: Whisk powdered sugar, orange juice, and zest until smooth. Drizzle over cooled cookies.
Notes
Store in an airtight container for up to 5 days. Freeze baked cookies for up to 3 months. Use finely ground almond flour, not almond meal.
