Ingredients

  • 1 lb ground beef (80/20 or 85/15)
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 1 (28 oz) can crushed tomatoes
  • 1 (15 oz) can tomato sauce
  • 4 cups beef or chicken broth (low-sodium preferred)
  • 2 teaspoons Italian seasoning
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 2 bay leaves
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • 8 oz bowtie pasta (farfalle) or pasta of choice
  • 1 cup ricotta cheese
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh basil and parsley for garnish

Instructions

  1. In a large pot or Dutch oven over medium-high heat, brown the ground beef, breaking it up as it cooks (5-7 minutes). Leave about 1 tablespoon of fat in the pot.
  2. Add diced onions and cook until soft and translucent (4 minutes). Add minced garlic and cook for 30 seconds until fragrant.
  3. Stir in crushed tomatoes, tomato sauce, broth, Italian seasoning, basil, oregano, bay leaves, red pepper flakes, salt, and pepper. Bring to a boil, then reduce heat and simmer for 10-15 minutes.
  4. Increase heat to bring soup back to a boil. Add pasta and cook according to package directions (10-12 minutes), stirring occasionally.
  5. Remove bay leaves. Taste and adjust seasonings. Add water or broth if too thick.
  6. Ladle into bowls and top each with a dollop of ricotta, shredded mozzarella, grated Parmesan, fresh basil, and parsley.

Notes

Store leftovers in airtight containers in the refrigerator for up to 5 days or freeze for up to 90 days. Pasta will continue absorbing liquid when stored; add broth when reheating. For best meal prep results, store pasta separately and add when serving. This soup thickens as it sits; thin with broth or water as needed.
