A hearty and delicious soup that brings all the flavors of lasagna into a comforting, bowl-friendly version.

- 1 lb ground beef (80/20 or 85/15)
- 1 medium onion, diced
- 4 cloves garlic, minced
- 1 (28 oz) can crushed tomatoes
- 1 (15 oz) can tomato sauce
- 4 cups beef or chicken broth (low-sodium preferred)
- 2 teaspoons Italian seasoning
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 2 bay leaves
- 1/2 teaspoon red pepper flakes (optional)
- Salt and black pepper to taste
- 8 oz bowtie pasta (farfalle) or pasta of choice
- 1 cup ricotta cheese
- 1 1/2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- Fresh basil and parsley for garnish
Instructions
- In a large pot or Dutch oven over medium-high heat, brown the ground beef, breaking it up as it cooks (5-7 minutes). Leave about 1 tablespoon of fat in the pot.
- Add diced onions and cook until soft and translucent (4 minutes). Add minced garlic and cook for 30 seconds until fragrant.
- Stir in crushed tomatoes, tomato sauce, broth, Italian seasoning, basil, oregano, bay leaves, red pepper flakes, salt, and pepper. Bring to a boil, then reduce heat and simmer for 10-15 minutes.
- Increase heat to bring soup back to a boil. Add pasta and cook according to package directions (10-12 minutes), stirring occasionally.
- Remove bay leaves. Taste and adjust seasonings. Add water or broth if too thick.
- Ladle into bowls and top each with a dollop of ricotta, shredded mozzarella, grated Parmesan, fresh basil, and parsley.
Notes
Store leftovers in airtight containers in the refrigerator for up to 5 days or freeze for up to 90 days. Pasta will continue absorbing liquid when stored; add broth when reheating. For best meal prep results, store pasta separately and add when serving. This soup thickens as it sits; thin with broth or water as needed.
