Ingredients

  • 2 large egg yolks
  • 2 teaspoons pure vanilla extract
  • 2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream
  • 1 tablespoon unsalted butter (optional)

Instructions

  1. Cream softened butter and sugar until light and fluffy, about 3-4 minutes.
  2. Add egg yolks and vanilla, mixing until fully incorporated.
  3. Whisk together flour, cocoa powder, and salt in a separate bowl.
  4. Gradually add dry ingredients to butter mixture on low speed until just combined.
  5. Cover and refrigerate dough for at least 1 hour or up to 48 hours.
  6. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  7. Roll chilled dough into 1-tablespoon-sized balls and place on prepared sheets 2 inches apart.
  8. Press your thumb deeply into the center of each ball to create an indentation.
  9. Bake for 10-12 minutes until set around edges. Re-press indentations if needed immediately after baking.
  10. Cool on baking sheet for 5 minutes, then transfer to wire rack to cool completely.
  11. For ganache: Heat heavy cream until just simmering, pour over chocolate chips, let sit 3 minutes, then stir until smooth.
  12. Let ganache cool 10-15 minutes until thickened, then spoon into each thumbprint.
  13. Allow ganache to set at room temperature for 1-2 hours before serving.

Notes

Chilling the dough is essential to prevent cracking and spreading. Make sure cookies are completely cool before filling with ganache. Store filled cookies at room temperature for 3-4 days or refrigerate for up to 1 week. Freeze unfilled cookies for up to 3 months.
